  • Anchovies in olive oil with sourdough bread
  • Beetroot roe with burrata and dill granite

  • Poached new leeks with sauce vinaigrette, spinach (and parma ham)
  • Vitello tonnato with fried parsley and capers
  • White asparagus with smoked cheese, mortadella and salted pistachio
  • “Potato salad” pickled small potatoes with sheep’s milk yogurt and lard

  • Milotto risotto with marrow (and truffle)

CARPACCIO
Beef carpaccio from Grambogård, drawn in brandy, mustard seeds and parsley.

Filling with spinach and ricotta. With dried
egg yolk and premium eco-ham from Troldgården.

CALVE JAW
Braised veal jaw from Grambogård in intense tomato sauce and gremolata. In addition potato salad of new Danish potatoes and sheep’s milk yoghurt.
